At the ‘Madame Brasserie’ restaurant in Paris, guests can enjoy fine French cuisine from Michelin-starred chef Thierry Marx at a height of 58 metres - with a view over the Seine and the Place du Trocadéro. The kitchen is located on the first floor of the world-famous Eiffel Tower and places the highest demands - including on the technology. During the renovation of the restaurant, the choice fell on a grease trap from KESSEL, because even in top gastronomy, wastewater containing grease must be disposed of reliably and in an environmentally friendly manner. The particular challenge: confined spaces, a sensitive environment and strict weight specifications. KESSEL has developed a customised solution for this - the EasyClean Modular NS 10, which is made of lightweight plastic and can be easily transported in several parts and installed on site. The separator works purely physically, reliably separates grease from the wastewater and is particularly durable.
